4 Ingredient Pesto Pasta

Let's face it, no one wants to spend their entire lunch break cooking, only to have a few minutes left to scarf down the meal. This 4 ingredient pasta is quick and easy to throw together in 20 minutes or less. I recommend cooking a big batch of pasta the night before, so all you have to do during lunch is cook the zucchini and sausage and toss it all together.


Zucchini is an awesome summer vegetable. Not only does it add color and nutrients to your meal, but if you cook it down, it practically melts into the dish. The key to tasty zucchini in this dish, without getting a mouthful of mush, is to cut it super thin and cook at medium high heat until it browns and starts to fall apart.




Ingredients

  • 1 serving of your favorite pasta

  • Pesto

  • 1/2 zucchini, sliced

  • 1 sausage of choice

Recipe

  1. Preheat your skillet with avocado oil or vegetable oil on medium-high heat.

  2. Once the oil starts to shimmer, add your zucchini. Cook until it starts to brown on both sides (~3-5 minutes).

  3. Add the sausage and cook until warm (or cooked if using raw sausage)

  4. Combine pasta, pesto, zucchini and sausage and enjoy!

*If you have parmesan, it makes for a great topper to this dish!
